Beetroot Salad with Feta Cheese and Mint

Cost: About 8 Shekels (US Dollars 2)

While I love beetroots everyone else here at home hates them. So this is something I can have all for myself!

For two persons:

3 beetroots
150 grams feta cheese (I used goat cheese)
1 teaspoon mint leaves chopped finely.

Dressing:
1 spoon Olive oil
1 spoon lemon juice
Salt and pepper
Peel the beetroot and cut it into cubes. Cook it for about 20 minutes until they soften but still has some bite to them. You can also cook them whole and then cut, but the cooking time will be longer.

When the beetroots are done, let them cool and then add them to a bowl. Mix all the ingredients for the dressings and then pour it over the beetroots and mix well. Crumble up the feta cheese and add it as well together with the mint leaves and serve.
