Yes, planning can be a pain and I often do not have the power for it. With the end of a nice weekend, the top priority is not to sit down and plan all the meals for the coming week.
But…. Then I have to remind myself that in the end, the effort of 30 minutes or so of planning will save me time and money during the week to come.
So here we go – our meal plan for this week:
Sunday: Salad with cooked Bulgur, tomatoes, cucumbers and peas with eggs and feta cheese.
Monday: Pizza on bread – basically bread with tomato paste, olives and cheese grilled in the oven!
Tuesday: Pea Soup with (or without) parmesan cheese and mint.
Wednesday: Rice paper wraps with chicken and vegetables.
Thursday: Beef stir-fry with carrots and cashew nuts.
