Tomato Soup with Peanut Butter

Cost: About 10 Shekels (3 US Dollars)

Sounds a bit weird but definitely worth the try!

Olive oil

2 cloves garlic minced

1 teaspoon grated ginger

½ onion in small cubes

1.5 liter chicken or vegetable stock

1 sweet potatoes in cubes

1 can crushed tomatoes

½ cup peanut butter (crunchy or smooth)

Pepper

Pour a bit of olive oil into a big pot and fry the garlic, ginger and onion for a few minutes. Pour in the stock, the sweet potatoes and the tomatoes and let it cook for about 20 minutes. After 20 minutes take out about a cup full of the soup and pour it into a bowl. Add the peanut butter and mix well. Then pour it back into the soup. Cook for about 10 more minutes, blend the soup, and serve!
