This soup is gluten-free, vegan and very good!
Ingredients:
2 big carrots in small cubes
½ onion in small cubes
½ teaspoon fresh ginger in small cubes
½ teaspoon curry
1 ½ liter vegetable stock
1 can coconut milk
How to:
Add all ingredients except the coconut milk to a big bowl and let it boil for about 30 minutes. Blend the soup and then add the coconut milk. Let the soup cook for a few more minutes and serve!
