½ cup corn flour
½ cup regular flour
2 teaspoons baking powder
½ teaspoon salt
1 egg
100 ml sour cream
50 grams melted butter
1 small sweet potato in cubes
Mix all the ingredients in a bowl. Add the melted butter, the sour cream, the egg and the sweet potato and mix again.
Pour the mixture into muffin forms (about half full) and bake at 200 degrees Celsius for about 20 minutes.
