Something sweet for the weekend 2

So it is that time of the week again and really want something sweet. Although I try not to eat access calories during the week, weekends are ok, right? 😉

This week I am trying out a new kind of sandwich cookie I haven’t tried before – butter cookies with Nutella. I like them apart so I am sure that together they will also be great.

 

For about 18 double cookies:

 

100 g melted butter

¼ cup sugar

1 teaspoon vanilla sugar

1 egg

1 ½ cup flour

1 teaspoon baking powder

Mix the butter and the sugars, then add the egg and mix again. Mix the baking powder with the flour (or use self-rising flour) and add it to the bowl. Knead it for a few minutes until you have a solid mass of cookie dough. Wrap in saran wrap and refrigerate for half an hour.

Roll out the dough on a surface with a bit of flour so that it doesn’t stick and cut out the cookies with a cookie form – any form will do. You will have to roll and cut a few times to use all of the dough.

Place the cookies on a baking sheet and bake for 10-15 minutes at 160 degrees Celsius.

When the cookies have cooled a bit, spread out Nutella on half the cookies and close them with the other half.

 

My kids normally love making these kinds of cookies but today they will be a surprise when they come home from school and kindergarden. Anyhow, sometimes it is also nice to bake alone and one thing is for sure – it goes a lot faster!

The cost of these cookies is about 8 Shekels (US Dollar 2).

Now I think I have to go for a run. Have a nice weekend 🙂
