Have you heard of Meatless Mondays? Meatless Mondays is an international campaign that encourages people not to eat meat on Mondays in order to improve their health and that of the climate by eating and producing less meat.
In the past months I have tried to incorporate meatless Mondays in our weekly meal plan (and normally at least another meatless day). I am doing this for several reasons; it adds more vegetables to our meals in a more conscious way, it makes our meals more varied and it lowers the costs as vegetables are (still) cheaper than meat.
Here is what we are eating this week:
Sunday: Danish meatballs in curry
Monday: Carrot Soup
Tuesday: Salad Platter with tuna and feta cheese and baguettes
Wednesday: Pasta with Tomato sauce and Parmesan cheese
Thursday: Lasagna
