I have always loved potato salad, especially in summer with grilled meat. There are as many versions as there are people. I like this one because it is simple and because of the homemade mayonnaise, that in my opinion, makes all the difference!
1 kg small round potatoes
Fresh herbs (I used mint and tarragon) – about a spoonful
Fresh ground pepper and salt
For the mayonnaise:
1 egg yolk
2 tablespoons vinegar
½ cup vegetable oil
1 teaspoon Dijon mustard
Cook the potatoes with the skin in salted water for about 20 minutes or until you can easily stick a fork in them. Strain and let them cool a bit before you cut them in halves. If you don’t like the skin you can peel it off.
For the mayonnaise, mix the egg yolk with the vinegar in a small bowl. Add the oil, little by little, continuously whisking until it becomes thicker ad creamy. Mix in the mustard in the end.
In a bigger bowl, add the potatoes, the wanted amount of mayonnaise and the herbs. Season with salt and pepper, mix well, and serve!
