Something sweet for the weekend

Why buy your cookies when you can bake them yourselves. It is cheaper, takes about 10 minutes (not including baking time, and tastes so much better – believe me!

Dear Husband loves cookies and these are his all-time favorites. I make them once in a while and they are always a hit with anyone who has ever eaten them. I try not to make too many at a time as we tend to eat them up very quickly….

The recipe is based on an old cooking book that I have, called “Home Baked” by the Australian Women’s Weekly. I like to change recipes, but this one I follow closely as I have learned that in baking it is worthwhile to be precise.

Almond Cookies with Jam (about 16 cookies)

Cost: About 10 Shekels (US Dollars 3)

90 g butter

1/3 cup sugar

1 teaspoon vanilla sugar

1 egg yolk

¼ cup almond flour

4/5 cup flour

½ teaspoon baking powder

Raspberry jam

Melt the butter in a small pan. In a bowl, mix the sugar and the vanilla sugar, then add the butter. Pour in the egg yolk and mix well. Add the almond flour and then the flour and the baking powder. Knead the whole mass well. Form small balls, approximately in the size of cherry tomatoes, place them on a baking sheet with space in between. Use the end of a cooking spoon (or something similar) to carefully make a hole in the center of the cookie. Place a bit of the jam in the whole and bake for about 20 minutes at 160 degrees. They might need a little more or a little less depending on your oven.
