For the Passover Seder this year my sister made these really tasty chocolate squares with dates and coconut. Or more correctly, she came up with the idea and my mother made them 😉 She is going to be a great boss someday soon!
They were very easy to make, doesn’t acquire a lot of ingredients, are fairly healthy and since they are not only kosher for Passover but also vegan and gluten free, I thought I would post the recipe here.

Chocolate Squares with Dates and Coconut (about 20 squares)
120 Grams Coconut flour
100 Grams Cashew Nuts (not salted)
220 Grams Pitted Dates (we used Medjool)
1 Tbsp Maple Syrup
100 Grams Dark Chocolate
1 Tbsp Coconut Oil (or Butter)
Place the coconut, cashews, dates and syrup in a food processor and blend until you have a rough paste. Spread the paste on a baking sheet or in a baking form. The size should be a square of about 15-20 cm with a thickness of about 1.5 cm. Put it in the fridge for about two hours to let it set.
After the date and nut mixture has set, add the chocolate and coconut oil to a small pan and melt it over a pan of simmering water. When it has melted, spread it over the date and nut mixture and place it in the fridge for about an hour. If you want, you can sprinkle a bit of sea salt on the chocolate layer.
After the chocolate has set, cut the cake into squares and serve.
