Butter
1 Onion diced
1 garlic clove minced
2 Carrots diced
1 can quality tomatoes
2 liter chicken or vegetable stock
A bit of thyme
Pepper
Fry the onion and garlic in a bit of butter. Add the carrots, the canned tomatoes and the stock. Let it boil lightly for about 30minutes. Season with thyme and pepper. Blend the soup and serve with some good bread.
