Mini Focaccias

Cost: About 5 Shekels (1.5 US Dollars)

300 ml lukewarm water

10 g yeast

2 spoonful olive oil

1 teaspoon salt

1 teaspoon sugar

Mix the water and the yeast until all the yeast has resolved in the water. Mix in the olive oil. Add about half the flour and mix then add the salt and sugar. Continue to add the rest of the flour little by little until the dough isn’t sticky anymore. You might need a little more or a little less than written here.  Cover the dough and let it raise for about one hour.

After one hour divide the dough into 8 pieces and form round but flat breads. I tend to poke holes in the dough with my fingers to make the breads flat. Leave to raise again for about 20-30 minutes.

Brush the breads with a bit of olive oil and sprinkle with coarse salt. Bake in oven on 200 degrees Celsius for 10-15 minutes.
