Quesadillas with avocado and tomato

Cost: About 25 Shekels (US Dollar 7)

1 Avocado

2 tomatoes

2 spring onion

2 spoonful lemon juice

50 g feta cheese

Salt and pepper

Grated yellow cheese

6-8 tortillas

 

Cut the avocado, tomatoes, onions and feta cheese into small cubes and place them in a bowl. Add the lemon juice, salt and pepper and mix well.

In a big pan, melt a little bit of butter (or use oil) and then place one tortilla. Spread out the filling on the tortilla, add grated cheese and “close” it with another tortilla. Fry it for a few minutes, flip it onto the other side and fry again for a few minutes.

Prepare the rest of the tortillas using the same method.
